Thoroughly wash the sorrel, dry it, and place it in a blender with young spinach leaves.
- Sorrel: 1 bunch
- Baby spinach: 50 g

Peel the pineapple (about half of it) and remove the core. Cut into medium pieces. Place in a blender.
- Pineapple: 700 g

Extract juice from oranges and half a lime (lime serves as an acidity regulator in this recipe, so it's best to add it at the end when the balance of sweet pineapple and sour sorrel is clear).

Add the orange juice to the blender, set aside the lime juice for now.

Blend at maximum speed for about 3-5 minutes, then check the balance of sour and sweet, and add lime juice if necessary, blending again.
