Dissolve honey and sugar in boiling water.
- Honey: 2 tablespoons
- Brown sugar: 2 tablespoons
- Water: 1 l

Grind the spices in a mortar and add to the boiling honey solution. Add green tea and remove from heat.
- Cinnamon sticks: 1 piece
- Anise (star anise): 1 piece
- Cardamom: 5 g
- Carnation: 5 piece
- Green tea: 5 g

Grate the ginger and add it to the sbiten. Cover with a lid and let it steep for 20 minutes. Then strain the sbiten through a sieve, pour it into glasses, and serve warm.
