The Old Waldorf-Astoria Bar Book, where this cocktail was first mentioned, was published just two years after the repeal of Prohibition in the United States, in 1935. The author, journalist Albert Crockett, instantly gained fame as an expert, and the book has gone through several editions and is still a must-read for anyone interested in cocktails and their history.

Cut half an apple into sticks about half a centimeter thick. Fill the serving glass to the top with crushed ice.
- Green apples: 0.5 piece

Mix cognac, liqueur, syrup, and vinegar in a mixing glass without ice. Pour the mixture into a shaker filled with ice, shake, and pour into a glass, topping with soda.
- Cognac: 40 ml
- Orange liqueur: 20 ml
- Sugar syrup: 10 ml
- Apple cider vinegar: 1 teaspoon
- Soda water: 50 ml

Place a spoon for absinthe on the ice, add apples on top, sprinkle with powdered sugar, and if desired, ignite after spraying with absinthe.
