Pour cognac, rum, and sugar syrup into a shaker, add the yolk, milk, and bitters. Shake in the shaker with ice.
- Cognac: 40 ml
- Dark rum: 40 ml
- Sugar syrup: 20 ml
- Egg yolk: 1 piece
- Milk: 80 ml
- Bitter: 1 ml

Strain into a tall glass. Grate a little nutmeg on top.
