Penicillin Cocktail

For years, using expensive single malt whiskey in cocktails was considered disrespectful and a waste of product. Even the original Penicillin, created by Sam Ross, a bartender at Milk & Honey in New York City, uses blended whiskey as the main ingredient and just a drop of single malt. We've gone further and made a more wasteful version.

Peel a twist of zest from the lemon for garnish. In a shaker, pour in whiskey, syrup, squeeze the juice of a whole lemon, add two pieces of ginger, and the egg white (separated from the yolk). Shake everything vigorously for five seconds. Open, add ice cubes to the shaker, and shake again.
- Scotch blended whiskey: 50 ml
- Ginger syrup: 15 ml
- Lemon: 1 piece
- Ginger: 10 g
- Egg white: 1 piece

Place a few ice cubes in the serving glass, strain the cocktail through a strainer. Garnish with lemon zest.
