Peel the beetroot and cut it into strips.
- Beet: 1 piece

Break all the chocolate and leave it.
- Dark chocolate 55%: 0.5 glass
- Milk chocolate: 0.3 glass

Whip the cream in a mixer on low speed, gradually adding sugar for about 2-3 minutes. Add 1 tablespoon of cream cheese and whip on a higher speed until stiff peaks form, about 2 minutes. Cover the bowl with the whipped cream with plastic wrap and set aside.
- Cream 38%: 1 glass
- Vanilla sugar: 1 tablespoon
- Cream cheese: 1 tablespoon

Pour milk into a pot and place it over medium heat. Add beetroot and cook until the beetroot colors the milk pink. The longer you cook, the richer the color will be. But do not let the milk boil. If the milk boils before coloring, reduce the heat and cook a little longer. Then remove from heat and strain the milk into a separate pot.
- Milk 3.2%: 3 glasss
- Beet: 1 piece

Return the milk to low heat, add broken chocolate, and cook, stirring, until the chocolate is completely dissolved. Remove from heat and pour into cups. Garnish with whipped cream and chocolate shavings. Serve immediately.
