Homemade ginger beer, also known as ginger lemonade, is a traditional drink of Irish cuisine with a spicy, refreshing taste and a slight tanginess. Historically, this drink was popular among sailors and travelers due to its ability to invigorate and quench thirst. In a pot, mix ginger, thinly sliced lemon, sugar, and cream of tartar. Place over medium heat and slowly bring to a boil, stirring until the sugar dissolves. Reduce heat and simmer for 5 minutes. Add 1.5 liters of cold water and yeast, stir, cover, and place in a cool place overnight.
- Grated ginger: 1 tablespoon
- Lemon: 1 piece
- Cane sugar: 250 g
- Cream of tartar: 0.5 teaspoon
- Dry yeast: 0.8 teaspoon

The next day, strain through cheesecloth and pour into sterilized bottles, leaving a little space at the top. Seal tightly and place in the refrigerator, checking every 3-4 hours and slightly loosening the lid to let bubbles escape.

Ginger beer is ready in 12–36 hours.
