This drink is prepared using vacuum infusion and sous-vide methods to fully reveal the flavors of the ingredients. Filtration through a fine mesh makes the infusion crystal clear, and added sugar syrup gently balances the strength. Chilled infusion is perfect for cozy evenings and gastronomic experiments. It can be served neat or used as a base for cocktails, creating new interesting flavor combinations.

Prepare all the ingredients.

Wash the feijoa and trim the ends.
- Feijoa: 1.25 kg

Place the feijoa in a vacuum bag and add lime zest.
- Lime zest: 25 g

Pour vodka into a bag and vacuum seal it.
- Vodka: 1.25 l

Cook the package in sous-vide at 65 degrees for 2.5 hours.

Cool the infusion completely and only then open the package.

Filter the infusion through a very fine mesh, such as a lavsan bag.

Add sugar syrup and sugar to the tincture, and mix well.
- Sugar syrup: 25 ml
