Strawberry Kissel with Lime and Mint

How many times have we made summer lemonade using strawberries, lime and mint! A tried and true combination. It's all the same here, only in the form of jelly and much more nutritious.

Prepare all the ingredients.

Cut the strawberries in half or quarters depending on their size.

Boil 1 liter of water with sugar in a pot.
- Water: 1.25 l
- Sugar: 70 g

Add strawberries, bring to a boil and cook for 5 minutes.
- Strawberry: 300 g

Add mint leaves (you can set aside a few leaves for decoration), zest and juice of 1 lime.
- Fresh mint: 5 sprig
- Lime: 2 pieces

Blend the compote with an immersion blender.

Strain through a fine sieve, leaving only the strawberry seeds. Return to the heat.

Mix the remaining water with starch until smooth.
- Water: 1.25 l
- Starch: 40 g

Pour the starch solution into the pot and bring it to a boil again while stirring with a whisk. When the jelly becomes homogeneous and starts to thicken, remove it from the heat.
- Starch: 40 g

Serve the strawberry jelly chilled, garnished with mint and lime.
- Fresh mint: 5 sprig
- Lime: 2 pieces
