Coffee in a Turk

The recipe was shared with us by the brand chef of the Gayane's restaurant, Gayane Breiova.

Take a cezve and add coffee to it.
- Natural coffee: 9 g

Add sugar to taste.
- Sugar: to taste

Thoroughly mix all the ingredients.
- Natural coffee: 9 g
- Sugar: to taste

Pour water.
- Water: 85 ml

Put the cezve on medium heat.

The coffee will gradually heat up, and a foam — crema will start to form on top.

Once this process starts, reduce the heat to minimum and carefully watch the foam.

The foam will start to rise, trying to escape from the turk. At that moment, remove the turk from the heat and wait for the coffee to settle and the foam to subside.

Return the cezve to the heat and repeat this process 3 more times. This is necessary for the coffee to release its essential oils. It is important not to let it boil.

Turn off the fire at the end.

Rinse the coffee cups with boiling water.

Pour the coffee into warmed cups to preserve its aroma.
