Watermelon Aperol

The red Aperol Spritz is undoubtedly the main cocktail of the summer, but by autumn we have become quite tired of it. It is time to retell the recipe in a new way, as, for example, Azamat Yakubov, head bartender of the Zafferano City restaurant, does. The bitterness of the orange aperitif that fills the wasp's stomach here dissolves in an aromatic cloud of watermelon pulp and raspberry puree. At the same time, all the advantages of the original drink - lightness, large volume and the magic of the magical bubbles of prosecco - are also present in the new interpretation.

Remove the seeds and skin from the watermelon and blend until smooth.
- Watermelon pulp: 130 g

Mix the crushed watermelon flesh with the other ingredients.
- Raspberry puree: 20 g
- Sugar syrup: 20 ml
- Lemon juice: 15 ml
- Aperitif Aperol: 50 ml
- Prosecco: 50 ml

Pour the obtained mass into a glass and garnish with fresh watermelon.
