Evaporate birch sap over low heat. From one liter, 250 ml of syrup should remain.
- Birch sap: 1 l

Put the martini glass in the freezer.

Fill the mixing glass or regular jar with ice.

Pour 50 ml of vodka into the jar. The smoother the vodka, the better. It's best if it's Russian vodka.
- Vodka: 250 ml

Pour 50 ml of evaporated birch juice.
- Birch sap: 1 l

Pour into a chilled martini glass.

Cut the zest from the lemon. Spray the surface of the cocktail with essential oils of the zest. Immerse the peel in the glass.
