Tomato milkshake and French fries with truffle salt

Blend the tomatoes, strain through a sieve, and freeze. Occasionally take out from the freezer and stir with a fork to create granita.
- Tomatoes: 680 g

Mix milk, cream, and sour cream.
- Milk: 100 ml
- Cream 20%: 100 ml
- Sour cream: 30 g

Take the tomato granita out of the fridge, mix it with a dairy base, and blend until smooth. It should result in a thick cocktail without noticeable ice crystals.

Salt and pepper the cocktail, then pour it into a bottle or glass.
