Prepare sorrel syrup. Boil sugar syrup from 800 grams of sugar and 1 liter of water. Chop the sorrel randomly, mix it with the syrup, and blend.

To prepare matcha syrup - combine 100 ml of still mineral water, 80 grams of sugar, and 5 grams of matcha, mix well, and let the sugar dissolve.
- Still mineral water: 100 ml

Pour 100 ml of each syrup into a pitcher with ice, add lemon juice, mix, and fill the pitcher to the top with sparkling mineral water.
- Freshly squeezed lemon juice: 50 ml

Garnish with mint and sorrel leaves, sprinkle with matcha tea powder, and serve immediately.
