Fragrant chicken broth with ginger is a traditional dish of Chinese cuisine known for its deep richness and health benefits. Ginger (about 4 cm), unpeeled, cut diagonally into slices 1 cm thick. Garlic, unpeeled, slightly crush with the flat side of a knife.
- Fresh ginger: 1 piece

Place the chicken fillet and soup set (chicken carcasses, necks, wings, feet) in a very large pot. Pour in 4 liters of cold water and bring to a boil over low heat. Reduce the heat to minimum - the broth should not boil, just 1-2 'bubbles'.
- Chicken fillet: 600 g
- Chicken bones: 1.5 kg
- Chicken necks: 0.5 kg
- Water: 4 l

Removing the foam without stirring the broth may take 20-30 minutes. Add salt, ginger, garlic, and the white part of green onions. Cook for 4 hours.

Cool the prepared broth, strain it. Chill for 1 hour, removing fat.
