Place the dry cottage cheese in a bowl, add sugar, and mix.
- Cottage cheese 9%: 400 g
- Sugar: 2 tablespoons

Separate the egg into white and yolk, whisk them separately. Add a pinch of salt to the egg white while whisking. Mix the cottage cheese, yolk, flour, and vanilla sugar. Add the egg white to the mixture and mix again. The result will be a homogeneous, dense, thick mass. If you like cheese pancakes with raisins or dried apricots, you can mix them into the mass as well.
