We cook poached eggs. Boil water, add salt, a bit of vinegar, then gently release the egg from a bowl into the water and cook for 1-1.5 minutes. Remove and transfer to ice water to stop the cooking process.

Coat the egg in flour with a pinch of salt, then in beaten egg, then in breadcrumbs.
