Syrniki are a classic dish of Russian cuisine that has become an integral part of family breakfasts. Their delicate, airy texture and light sweetness make them an ideal treat. Historically, syrniki were made in villages from simple and accessible ingredients, and today they remain a beloved delicacy. In this recipe, cottage cheese plays a key role, giving syrniki softness and rich flavor. Fried to a golden crust, they pair wonderfully with maple syrup that adds exquisite sweetness. Syrniki can be served with sour cream, which adds a light tanginess balancing the sweetness of the syrup. They are perfect for both a cozy breakfast and an afternoon dessert, filling the day with warmth and comfort.

If the cottage cheese is too grainy, it's better to strain it through a sieve. Mix all the ingredients without flour! This is very important, without the help of mixers, blenders, etc., otherwise the mass will spread and you won't be able to shape the cheese pancakes.
- Cottage cheese: 300 g
- Egg yolk: 1 piece
- Sugar: 80 g
- Salt: pinch
- Vanilla: pinch

Next, we dust our hands with flour, separate 50 grams from the cottage cheese mass and roll it into a ball in our palms until it stops sticking. Then we coat it in flour and roll it again in our palms. We repeat this procedure 4 times.

Then we roll it in flour again and place the ball in a 6 cm diameter mold. I don't have such a mold at home, so I made one from foil. In the mold, we shape the cheese pancake with our fingers and set it aside for further frying.

Fry on both sides until golden brown. Place the cheese pancakes on a plate, drizzle with maple syrup, and set a bowl of sour cream next to it.
