Peel the ripe mango. Depending on its ripeness, the skin will come off more easily. Remove the pit. Cut the mango into cubes and set aside in a separate plate.

Combine coconut milk, sugar, ground ginger, and a pinch of salt in a pot. Place over medium heat and bring to a boil. Add oats and cook, stirring, for about 5-7 minutes until thickened. Remove from heat and stir in mango pieces, coconut flakes, and a bit of lime juice, then return to low heat for 1 minute. Mix well. Finally, remove from heat, cover, and let sit for a couple of minutes.
- Coconut milk: 600 ml
- Sugar: 2 tablespoons
