Heat oil in a pan and sauté the onion for 3 minutes. Add 250 g of quartered tomatoes and finely chopped thyme leaves, cook for 2 minutes. Season to taste.
- Olive oil: 2 tablespoons
- Shallots: 3 pieces
- Tomatoes: 250 g
- Fresh thyme: 1 tablespoon
- Ground black pepper: to taste
- Salt: to taste

Preheat the oven to 180 degrees. Grease the muffin tin. Whisk 4 eggs with cream and season. Pour into molds and top with tomato mixture. Sprinkle with grated cheese. Bake for 12-15 minutes until risen.
