Lay the beef in a single layer on parchment and place it in the freezer for 20 minutes. Then work in batches. Put 1/3 of the beef in a food processor and chop it a bit. Add 1/3 of the pork sausages and blend until smooth. Repeat with the remaining meat and sausages.
- Beef: 700 g
- Pork sausages: 250 g

Divide the mixture into 6 equal portions and shape them into patties. The patties should be slightly wider than the buns. Make a dent in the center of each patty with your thumb. Place the patties in the refrigerator.

Mix mayonnaise, ketchup, hot sauce, mustard, parsley, lemon juice, cayenne pepper, horseradish, and garlic in a food processor. The sauce should be smooth. Add salt and pepper. The spicy sauce is ready.
- Mayonnaise: 120 g
- Ketchup: 1 tablespoon
- TABASCO®: 1 tablespoon
- Mustard: 2 tablespoons
- Chopped parsley: 1 tablespoon
- Lemon juice: 1 tablespoon
- Cayenne pepper: 1 teaspoon
- Horseradish: 20 g
- Garlic: 2 cloves
- Salt: to taste
- Freshly ground black pepper: to taste

Place celery in a bowl of ice water and put it in the refrigerator.
- Celery: 3 bunchs

Preheat the grill.

Brush the sliced bell pepper and onion with vegetable oil. Fry on each side until the vegetables are soft.

Season the meat patties with salt and pepper. Grill them.
