    Preparing the marinade: take thick yogurt without additives, squeeze juice from lemon, peel and grate ginger, crush three cloves of garlic through a press, mix the other marinade ingredients: coriander, paprika, pepper, salt, mustard.

    We wash and dry the lamb. The remaining garlic cloves are cut into four parts. We make incisions in the meat with a knife and stuff it with garlic. We coat it with marinade and let it marinate for 3-12 hours. If marinating for 3 hours, leave the marinated meat at room temperature and under pressure.

    Fry the meat in an ovenproof dish according to the size of the piece and cover it with foil on top to reduce the risk of broth escaping and the meat drying out.
