Preheat the grill or barbecue.

Grate the lemon zest on a fine grater and transfer it to a large bowl. Squeeze the lemon juice into it as well. Add olive oil, oregano, salt, and black pepper. Mix well. Pour 2 tablespoons of the marinade into a small bowl.

In a large bowl, place cherry tomatoes, mushrooms, diced zucchini, and chopped red onion. Mix well.
