Celery Root Pancakes with Cottage Cheese and Smoked Ham

We partially borrowed this recipe from Jamie Oliver, but instead of English cheddar we added regular cottage cheese - it turns out cheaper and more tender. By the way, Jamie recommends replacing heavy vegetable puddings with these pancakes - they are similar in composition of ingredients, but look much more modern. We would like to add that you can add any vegetables to the celery: cauliflower, broccoli, parsnips, pumpkin, whatever you like, together or separately .

Chop the ham finely and fry it over medium heat until crispy. Let it cool.
- Smoked pork ham: 80 g

Squeeze the cottage cheese to remove water, pass it through a sieve or blend it to get rid of lumps.
- Cottage cheese: 100 g

Grate the celery on a fine grater.
- Celery root: 200 g

Mix celery with breadcrumbs, flour, cottage cheese, grated cheese, ham, dill, and beaten eggs. Add salt and mix well.
- Celery root: 200 g
- Breadcrumbs: 100 g
- Wheat flour: 75 g
- Cottage cheese: 100 g
- Grated cheese: 75 g
- Smoked pork ham: 80 g
- Dill: 2 sprigs
- Chicken egg: 6 pieces
- Salt: to taste

Heat 1 tbsp of vegetable oil in a large skillet over medium heat and fry the pancakes in small batches for 3-4 minutes until crispy and golden.
- Vegetable oil: 50 ml

Transfer the ready pancakes to a paper towel. Serve with sour cream and green onions.
