Finely chop onion, celery, carrot, and garlic and sauté in a saucepan with olive oil. Add halved tomatoes (peeled and seeded). Season with salt and pepper and simmer for 20 minutes.
- Onion: 1 head
- Celery stalk: 1 stem
- Carrot: 1 piece
- Garlic: 4 cloves
- Olive oil: 100 ml
- Tomatoes: 600 g
- Cherry tomatoes: 8 pieces
- Salt: to taste
- Ground black pepper: to taste

Fry the bread cut into small pieces and add to the tomatoes. Then pour in water (3/4 liter), crumble the basil and sage, mix well and simmer for another 5 minutes.
- Stale white bread: 400 g

The tury should neither be liquid like soup nor too thick. This is adjusted by adding the right amount of water. Serve the tury in deep plates, drizzled with a little olive oil.
