Whole Cabbage Leaves Preserved in Honey Brine

The recipe was born from a discovery: it turns out that even the most shabby white cabbage, when combined with honey, acquires significance. The honey brine creates a sweetish cocoon around the leaves, and inside - that same irrepressible cabbage spirit. Why is it better to roll up whole leaves instead of shredded cabbage in this recipe? This gives more options: you can use the leaves for stuffed cabbage rolls and dolma, and prepare salad dressings with honey brine. However, shredded cabbage with honey will also be an excellent filling for pies, strudels and kulebyakas.

Remove the tough outer leaves of the cabbage. If it doesn't fit, cut it in half along the core and place it in the microwave.
- White cabbage: 3 kg

Heat for 2-3 minutes, then remove the softened leaves. Similarly, while heating, divide the entire cabbage into leaves.

Peel the carrot and slice it into thin (up to 5 mm) rounds.
- Carrot: 1 piece

Place part of the leaves, part of the carrots at the bottom of a jar or enamel pot, sprinkle with pepper, and add bay leaves.
- White cabbage: 3 kg
- Carrot: 1 piece
- Black peppercorns: 10 pieces
- Bay leaf: 4 pieces

Alternate layers until the leaves run out. You can cut the leaves smaller, for example into squares, if you want to use cabbage as a snack or in a vinaigrette instead of making stuffed cabbage.
- White cabbage: 3 kg

Prepare the brine. Dissolve the specified amount of honey, sugar, and salt in 1 liter of warm boiled water.
- Honey: 2 tablespoons
- Sugar: 1 tablespoon
- Salt: 1 tablespoon

Pour the brine over the cabbage, it should cover it by 2-3 cm. If there isn't enough brine, prepare another batch.
- Honey: 2 tablespoons
- Sugar: 1 tablespoon
- Salt: 1 tablespoon

Place the cabbage under a weight, for example, by covering it with a lid and placing a bottle of water on top.

In 3 days, the cabbage will be ready. If you cooked the cabbage in a pot, you need to transfer it to jars and pack it tightly.

Pour brine over the cabbage and cover with lids. Store in the refrigerator.
