Whip egg whites and sugar in a mixer, add yolk and flour, pipe the biscuit onto a baking sheet in the shape of 'ladyfingers', bake at 200 degrees for 5 minutes. Cool down.
- Egg white: 13 pieces
- Sugar: 310 g
- Egg yolk: 18 pieces
- Wheat flour: 250 g

Soak gelatin in cold water. Mix mascarpone and cream, boil sugar with water until it forms a ball, mix with whipped yolk, add squeezed and melted gelatin; do the same for the second pair of sugar-egg white. Mix yolk with cream, finally add the meringue.
- Gelatin: 10 g
- Mascarpone cheese: 250 g
- Cream: 250 ml
- Sugar: 310 g

Lay well-soaked biscuit in syrup in the tray, add part of the mousse, sprinkle with a thick layer of cocoa, then add another layer of syrup-soaked biscuit and the remaining mousse.
- Sugar syrup: 100 ml
- Liquor: 100 ml
- Freshly brewed coffee: 100 ml
