Cottage cheese pancakes with raisins baked in the oven are a delicate and airy dessert of Russian cuisine, infused with the warmth of home comfort. Traditional syrniki, known since the 19th century, have taken on a new form thanks to baking. In this recipe, the cottage cheese base whipped with sugar and egg is enriched with sweet raisins and the lightness of semolina, creating a delightful balance of flavor. Thanks to the oven, syrniki acquire a golden crust while remaining soft inside. They can be served with honey, sour cream or jam, enjoying the natural sweetness of cottage cheese. This option is especially convenient for those who prefer minimal use of oil, making the dish light and healthy. Raisin syrniki are an ideal treat for a cup of fragrant tea, reminding us of the traditions of Russian cuisine and the simple joys of home gatherings.

Pass the cottage cheese through a sieve.
- Cottage cheese 9%: 300 g

Beat the eggs with sugar.
- Chicken egg: 1 piece
- Sugar: 60 g

Add the whipped egg mixture to the cottage cheese, 2 tbsp of flour (level), 1 tbsp of semolina (level), 0.5-1 tsp of baking powder, 1/4 cup of raisins, and 1 tbsp of sour cream (20%). The consistency is slightly thicker than sour cream (does not drip from a spoon and cannot be kneaded).
- Cottage cheese 9%: 300 g
- Chicken egg: 1 piece
- Sugar: 60 g
- Wheat flour: 40 g
- Semolina: 20 g
- Baking powder: 3 g
- Raisin: 0.3 glass
- Sour cream: 1 tablespoon

Preheat the oven to 175 degrees.

Use a tablespoon to distribute the filling into silicone molds (I used 1 heaping tablespoon for one cheese pancake).

We place the silicone molds in the oven for 35 minutes.

After the time is up, let the cheese pancakes sit in the closed oven for 5 minutes, then another 5 minutes with the oven door slightly open.
