Yogurt Puff Pastry Cookies

Yogurt puff cookies are a light and airy dessert from sunny Greece, where natural ingredients and delicate textures are traditionally valued. Yogurt gives the dough special softness, while butter adds a rich flavor. These fragrant pastries have a slightly crispy crust outside but remain tender inside. They can be served as an independent dessert or complemented with honey, nuts, and fruits. Greek housewives love to bake them for morning coffee or as treats for guests. The simplicity of the recipe allows for experimentation with shape and sweetness, making them ideal for creative culinary experiments.

1
Mix the sifted flour, baking powder, and salt (I initially add 2.5 cups of flour and add more if needed while kneading). Optionally, add sugar.
- Wheat flour: 3 glasss
- Baking powder: 1 teaspoon
- Salt: 0.5 teaspoon
- Sugar: to taste
2
Chop or grind the dry mixture into crumbs with butter.
- Butter: 75 g
3
Add yogurt to the obtained mass and knead a firm dough. At first, the dough may seem too dry, but don't rush to add yogurt. The butter will gradually soften, and the mass will become homogeneous over time.
- Yogurt: 180 g
4
Roll out the dough to a thickness of about 5 mm and cut out shapes. It all depends on your imagination.
5
Brush the cookies with egg and sprinkle with sugar.
- Chicken egg: 1 piece
- Sugar: to taste
6
Bake at 170-180 degrees for 10-15 minutes (adjust according to your oven).
