We mix ginger, cardamom, cinnamon, clove, and baking soda in a bowl.
- Ground ginger: 2 teaspoons
- Ground cardamom: 1 teaspoon
- Ground cinnamon: 1 teaspoon
- Ground cloves: 0.5 teaspoon
- Soda: 1.5 teaspoon

Add flour to the spices and mix.
- Wheat flour: 200 g

In a separate deep bowl, mix the butter and sugar with a mixer (or spoon).
- Butter: 100 g
- Sugar: 110 g

Then we add 1 egg and slightly warmed honey to it. We mix everything thoroughly.
- Chicken egg: 2 pieces
- Liquid honey: 3 teaspoons

Now we add the flour to the egg-butter mixture and mix well. The dough turns a deep brown color right before our eyes.
- Wheat flour: 200 g

Knead the dough well by hand and send it to the refrigerator for 1.5 - 2 hours. At first, the dough will be slightly soft, but after cooling, it can be rolled out easily.

Then we roll the dough quite thin and cut out shapes with molds.

Place the cookies on a baking sheet and put them in the preheated oven for 5-7 minutes. Remove when the cookies are slightly brown.

Icing: separate the egg white from the yolk, add lemon juice to the egg white, and beat with a mixer. Start on low speed, then increase.
- Lemon juice: 1 teaspoon

When the fluffy foam appears (not yet meringue), we add powdered sugar, обязательно through a sieve. Whip until thick paste consistency.
