Smart pastry is an amazing dessert that impresses with its simplicity and culinary magic. When baked, the liquid dough separates into three layers: a delicate sponge on top, a creamy middle, and a dense base. Its origin is shrouded in mystery, but Russian cuisine has lovingly embraced this recipe, adding its own soul to it. The taste of the pastry is a harmony of vanilla sweetness and airy mousse that melts in your mouth. It is perfect for a cozy tea party or festive gathering, surprising guests with its textural play. It’s easy to prepare, and the result seems magical as if the pastry itself decides what it wants to be!
