Spotted Dick Pudding

One of the best English puddings, "Spotted Dick". The name can be translated quite freely and indecently, but in fact it is simply a spotted pudding. The spots are from the berries, and the word "dick" was used to call puddings in the 19th century.

Prepare the necessary ingredients.

Soak dried fruits in water, bring to a boil over heat, then remove. Let cool for 15 minutes, then drain the water.
- Light raisins: 100 g
- Dark raisins: 100 g
- Dried cranberries: 100 g

Sift the flour.
- Wheat flour: 300 g

Rub the butter into the flour with your hands until the dough resembles sand.
- Butter: 150 g

Add sugar and dried fruits and mix, gradually pouring in milk to combine the dough.
- Sugar: 75 g
- Light raisins: 100 g
- Dark raisins: 100 g
- Dried cranberries: 100 g
- Milk: 180 ml

Grease the molds with butter and place the dough in them.
- Butter: 150 g

Cover the pudding with paper, greased side down.

Then cover with foil and wrap each mold with string to create a handle for convenience.

Place an inverted plate or something similar in a large pot. Put the molds with dough on top and pour in hot water until the water level reaches the middle of the molds. Cover with a lid, place on the heat, and cook for about an hour.

Remove the molds from the pot and let them cool. Serve.
