Grissini with chocolate (Grissini al cioccolato)

Grissini al cioccolato is an Italian treat that combines crispy breadsticks with a rich chocolate aroma. Originating from Piedmont, grissini are traditionally served with wines and appetizers, but this version turns them into an exquisite dessert. The dough mixed with chocolate chips rises and is then rolled into thin sticks that are baked to perfect crispness. The flavor blends light sweetness with a rich chocolate note, creating a harmony of simplicity and sophistication. They are perfect for breakfast with a cup of espresso and can be served with cream or fruits or enjoyed on their own while indulging in Italian gastronomic traditions. Each crispy slice is a small portion of delight!

1
Soak the yeast in 100 ml of hot water and let it sit for 15 minutes.
- Dry yeast: 7 g
- Water: 200 ml
2
In a bowl, we will add 350 g of flour, make a well, add yeast with water, sugar, salt, and the remaining 100 ml of hot water.
- Wheat flour: 400 g
- Dry yeast: 7 g
- Water: 200 ml
- Sugar: 2 teaspoons
- Salt: pinch
3
Pour 100g of chocolate drops onto the work surface.
- Chocolate drops: 100 g
4
We will roll out the dough on them and start kneading it, incorporating the chocolate and adding the remaining flour (trying not to overmix with flour). We knead the dough for about 12 minutes.
- Chocolate drops: 100 g
- Wheat flour: 400 g
5
We wrap it and place it in a warm place for 40 minutes.
6
Roll the dough into a sausage shape, 3-4 cm thick.
7
We cut the disks about 2 cm thick. Each disk is rolled into a thin strip about 25 cm long (the dough will rise a bit more).
8
Place immediately on a parchment-lined baking sheet, 1 cm apart. Cover with a towel and let sit for another 20 minutes.
9
After that, place in a preheated oven for 10-12 minutes at 200°C.
