German apple pancake is a refined and aromatic dish that combines the lightness of airy batter with the rich flavor of caramelized apples. This recipe has roots in German culinary traditions, where such baked goods often accompany family breakfasts and festive gatherings. The combination of vanilla aroma, creamy tenderness, and sweet spiciness of cinnamon makes the pancake special. The slight tartness of the apples is balanced by the caramel notes of brown sugar, creating a wonderful harmony of flavors. This dish can be served as a standalone dessert or complemented with a scoop of vanilla ice cream. German apple pancake is an ideal choice for a cozy evening with family when you want to warm up and enjoy traditional European flavors.

1
Prepare the ingredients.
2
Place the baking tray in the upper part of the oven and preheat it to 260°C. Prepare the apples: wash, peel, and core them.
3
Cut the apple in half and slice it into thin pieces.
4
In a bowl, mix flour, granulated white sugar, and salt.
- Wheat flour: 0.5 glass
- Sugar: 1 tablespoon
- Butter: 2 tablespoons
5
In another bowl, mix the eggs with half-and-half (50% milk and 50% heavy cream) and vanilla essence. Stir until smooth.
- Chicken egg: 2 pieces
- Milk: 0.3 glass
- Heavy cream: 0.3 glass
- Vanilla extract: 1 teaspoon
6
Add the mixed liquid ingredients to the flour.
7
Mix well with a whisk for about 20-30 seconds. Set aside.
8
Heat a non-stick skillet (about 25 cm in diameter) over medium heat. Melt butter in it.
- Butter: 2 tablespoons
9
Add apples, brown sugar, and cinnamon to the pan.
- Apple: 4 pieces
- Sugar: 1 tablespoon
- Lime juice: 1 teaspoon
10
Fry over medium heat until the apples are soft and golden-brown (about 10 minutes).
11
Now work quickly: pour the egg-milk mixture over the apples and place the pan in the preheated oven.
12
Reduce the heat to 225°C and fry until done for about 18 minutes. The edges of the pancake should brown. Then remove the finished pancake and run a spatula around the edges, separating them from the pan.
13
Flip the finished pancake onto a plate upside down, then sprinkle with powdered sugar and cut into triangles.
- Powdered sugar: to taste
