Icing - glaze for drawing on cookies

Icing can be used to draw dots, lines, or to completely fill the entire surface of the cookie. To prepare the mass for filling, add a few drops of water to the icing and stir. If the icing is still thick, add more water and so on until the desired consistency is achieved - it should be liquid enough to spread over the surface of the cookie. To fill, first draw a line along the perimeter of the future filling with thick icing, and then fill the inner space with liquid icing.

To make icing, we only need two main ingredients — egg white and powdered sugar. One egg yields a considerable amount of icing, enough for a good kilogram of cookies.
- Egg white: 1 piece
- Powdered sugar: 150 g

We wash the egg thoroughly with soap. We carefully separate the egg white from the yolk. We beat the egg white with a mixer on low speed, with a whisk, or with a fork. Our goal is not to whip the egg white into a foam. It should just become a homogeneous liquid mass.
- Egg white: 1 piece

When the egg whites become uniform, add the sifted powdered sugar and mix thoroughly.
- Powdered sugar: 150 g

Now we add lemon juice, which will make the icing shine and shimmer in the light, and mix. The icing is ready.
- Lemon juice: 1 teaspoon

Next, if you need icing in different colors, divide the icing into different containers and add food coloring. Mix it. Look how beautiful it is!

We distribute our mass into pastry bags. You can use regular bags if you don't have pastry bags. Or a pastry syringe.
