For the brown sauce, combine cane sugar and flour in a saucepan, add 180 ml of hot water, place over medium heat and cook for 5 minutes until slightly thickened. Add butter and cook for another 5-6 minutes. Remove from heat, stir in 3/4 teaspoon of ground cinnamon and cool, then transfer to an airtight jar until use.
- Brown sugar: 200 g
- Wheat flour: 3 tablespoons
- Butter: 1 tablespoon
- Ground cinnamon: 1.3 teaspoon

Dissolve starch in 50 ml of milk, let it sit for a couple of minutes.
- Cornstarch: 3 teaspoons
- Milk 3.2%: 200 ml

For the ice cream, in a small saucepan over medium heat combine cream, remaining milk, regular white sugar, salt, vanilla seeds and pod, 1/2 teaspoon ground cinnamon and broken cinnamon sticks; stir and bring almost to a boil. Remove from heat, cover with a lid and let sit for 1 hour. After that strain out the spices and return the milk-cream mixture to medium heat; pour in cornstarch milk and cook while stirring constantly until thickened. Remove from heat; add cream cheese and mix until smooth. Cool to room temperature then refrigerate overnight.
- Cream 30%: 200 ml
- Milk 3.2%: 200 ml
- Sugar: 85 g
- Vanilla pod: 0.5 piece
- Cinnamon sticks: 5 piece
- Ground cinnamon: 1.3 teaspoon
- Cornstarch: 3 teaspoons
- Cream cheese: 50 g

Freeze in the freezer for ice cream according to the instructions, adding pre-chopped small pieces of classic cinnamon roll with cream cheese frosting (half of a classic-sized roll). Place the finished ice cream in a container, alternating layers with cinnamon sauce (7-8 teaspoons). Store in the freezer for at least 5 hours before serving.
