Mini Cherry Biscuits for Sunday Breakfast

Mini galettes with cherries are a cozy treat perfect for a leisurely Sunday morning. Their history traces back to traditional British pies, but this version focuses on the delicate pastry and juicy filling. Thin layers of dough soaked in butter and slightly caramelized during baking create a tender texture, while the sweet-sour cherries add a tangy flavor. A light sprinkle of cinnamon and cane sugar adds depth to the aroma. Mix melted butter, a pinch of salt, sugar, and 80 ml of warm water (not boiling), add sifted flour, and knead a soft, elastic dough. Cover the dough with a towel and let it rest for 30 minutes.
- Butter: 50 g
- Salt: pinch
- Sugar: 1 tablespoon
- Wheat flour: 180 g

Remove the pits from the berries, place them in a strainer, and drain the excess juice. Cherries can be used instead of sour cherries.
- Cherry: 350 g

Divide the dough into 4-5 parts. Roll each one out. Place on a baking sheet lined with parchment paper and put berries in the center of each circle. Fold the edges of the galettes so that the berries remain exposed in the center. Sprinkle with brown sugar and cinnamon.

Cut out 4-5 circles from foil the size of the open part of the galette. Place them on top of the berries and send to the preheated oven.

Cook for 20 minutes at 190 degrees.

Cool down and sprinkle with powdered sugar.
