'Dove Pie' made from chicken is a dish with a deep history rooted in ancient Russian culinary traditions. Although its name resembles the classic pie with doves, the modern version is made from tender chicken fillet, making it accessible and incredibly juicy. The yeast-based shortcrust pastry gives the pie lightness, while the filling of chicken, mushrooms, cheese, and cream reveals a rich palette of flavors. This pie is perfect for both festive dinners and family gatherings. It pairs wonderfully with fresh vegetables or a light salad, and its golden crust and rich filling make it a true gastronomic delight. Each serving offers comfort and warmth of traditional Russian cuisine.

First, the dough: Mix all the ingredients of the first stage, namely: yeast, milk, flour, sugar in a bowl. Let it sit in a warm place for 15 minutes.
- Dry yeast: 1 tablespoon
- Milk: 300 ml
- Wheat flour: 1 kg
- Sugar: 2 tablespoons

Then we mix salt and oil in a glass and add it to the slightly bubbling mixture. Next, we knead the dough with flour until it stops sticking to our hands. You can also buy frozen dough; both puff and yeast dough will work.
- Salt: 1 teaspoon
- Vegetable oil: 5 tablespoon
- Wheat flour: 1 kg

Then we leave it for another 30 minutes (if not understood, for the same amount of time).

Filling... Do not fully cook the fillet so that it remains raw inside. Take it out and slice.
- Chicken fillet: 500 g

Chop the onion and mushrooms finely and fry them. Add chicken and any spices you like. Fry it. You can replace mushrooms with anything you want. I used tomatoes. It's also tasty.
- Onion: 2 pieces
- Champignons: 200 g
- Chicken fillet: 500 g
- Spices: 10 g

Grate the cheese on a fine grater and mix it with cream and eggs.
- Cheese: 250 g
- Cream 20%: 200 g
- Chicken egg: 2 pieces

Grease the baking dish with oil, roll out the dough, and place it in the dish. Calculate to ensure the dough fits the large dish.
- Vegetable oil: 5 tablespoon

Place everything we fried into the dough. Pour cream with cheese and egg over it. Make sure it doesn't leak in the mold.
- Cream 20%: 200 g
- Cheese: 250 g
- Chicken egg: 2 pieces

Roll out more dough and cover it on top, sealing the edges to the top. Make sure the cream doesn't leak out.

Bake for 30-40 minutes at 200 degrees. Brush with the yolk of one egg beforehand.
