Wash two apples, remove the core, peel, and cut into slices or cubes (not too small, but not too large). Melt some butter.

- Lemon zest: to taste

Pour the apple slices into a saucepan, add sugar, lemon juice with zest, and cook for fifteen to twenty minutes, stirring, over medium heat.

Roll out the puff pastry and cut out small circles. The shape of the choux should resemble a crescent.
