Kefir chocolate chunk cake is a delicate and aromatic pastry from Russian cuisine that combines a light texture with rich chocolate notes. Kefir gives the dough special softness, while baking soda activated by the dairy product makes it fluffy. In a deep bowl, beat the eggs with sugar until white. I use a mixer at all stages, but the dough can also be prepared with a fork or whisk.
- Chicken egg: 3 pieces
- Sugar: 1 glass

Gradually add melted or softened margarine while continuing to beat.
- Margarine: 200 g

Add baking soda to the kefir in a glass and mix well and quickly. When the soda reacts with the kefir, pour it into our mixture while still whisking.
- Kefir: 1 glass
- Soda: 1 teaspoon

Once all the liquid ingredients are well mixed, we start adding flour (it's better to sift it beforehand) by the tablespoon, constantly whisking. At this stage, a mixer is essential to eliminate all lumps.
- Wheat flour: 2.5 glasss

The dough is ready. Now you can add anything you like: nuts, candied fruits, berries. In this case, our cake is chocolate, so we gradually add cocoa powder to the dough and mix it well with a mixer to make it uniform.
- Cocoa powder: 2 tablespoons

We break the chocolate bar into pieces, add it to the dough, and mix with a spoon. I cut each piece into 4 parts.
- Chocolate: 200 g

If the cake pan is metal like mine, grease it with butter and dust it with breadcrumbs or semolina so that the finished cake easily 'falls' out of the pan.
- Butter: 1 tablespoon
- Breadcrumbs: to taste

Pour the batter into the mold and place it in the preheated oven. Bake at medium heat for about 40 minutes. It's better not to open the oven for the first half hour, then you can take out the cake and check for doneness with a wooden skewer.
