The crispy crust and tender texture inside make them an ideal choice for those who appreciate simple yet exquisite homemade baking.

Mix oatmeal in one bowl: it's better to use finely ground for quick cooking so the dough will be more uniform, but if you're making energy cookies with high fiber content, use large flakes. Add chopped nuts, cinnamon, sugar, raisins, baking powder, and salt to the flakes. Choose nuts to your taste. Separately mix chopped banana pieces, grated apple and carrot here as well as olive oil and warm boiled water. Now it's time to combine both mixtures. Knead well. Let the dough rest for 15 minutes.

The dough should be quite thick. If the dough is a bit runny, you can add some flour. Preheat the oven to 180 degrees. Line the baking tray with parchment paper. Spoon the dough onto the parchment, placing the cookies a few centimeters apart. Bake for 25-30 minutes until done.
