Clafoutis with frozen berries and coconut milk is an elegant dessert of French origin that enchants with its delicate texture and rich flavor. Traditionally, clafoutis is made with cherries, but this recipe uses frozen berries that add sweetness and a slight tartness. Coconut milk brings creamy softness and an exotic aroma, while almonds add a nutty note. Baked berries create natural moisture, and the golden crust makes the dessert especially appetizing. This clafoutis is perfect for cozy family dinners as well as sophisticated parties where it will be an exquisite finale to the meal. It can be served warm or chilled, complemented by a scoop of vanilla ice cream or light cream.

1
Whisk the eggs into a foam.
- Chicken egg: 3 pieces
2
Add coconut milk and mix well.
- Coconut cream: 200 ml
3
Preheat the oven to 180 degrees.
4
Almonds need to be ground to a flour-like consistency, a coffee grinder will work for this.
- Almond: 50 g
5
Mix almond flour with sugar, cinnamon, salt, and flour (for gluten-free version use any brand of all-purpose baking mix or rice flour, better not to use flour with a strong taste like corn flour).
- Ground cinnamon: to taste
- Sugar: 40 g
- Salt: pinch
- Wheat flour: 2 tablespoons
6
Mix the liquid components of the dough with the solid ones and blend with a mixer until you achieve a sour cream consistency.
7
Grease the bottom of the fireproof mold with butter.
8
Place half of the cherries and blueberries in the mold and cover with batter, then evenly sprinkle the second half of the berries on top of the batter so they bake at different depths. Some even let the batter sit in the oven for 5 minutes.
- Frozen cherries: 0.5 glass
- Frozen Blueberries: 0.5 glass
9
Berries can be thawed and drained beforehand, or they can be added directly from the freezer.
