Charlotte without flour with cinnamon

Flourless cinnamon charlotte is a light and airy dessert that combines the tenderness of cottage cheese, the sweetness of apples, and a spicy hint of cinnamon. This recipe is a more dietary version of the classic charlotte as it contains no flour, using instead skimmed dry milk and starch. Historically, charlotte originated in Europe as a way to use stale bread but has evolved into various interpretations over time. This version is perfect for those who watch their diet but don't want to miss out on pleasure. The fluffy batter combined with fragrant apples creates a harmony of flavors, and steaming gives it an especially tender texture. Serve the charlotte warm with a cup of fragrant tea – it's a cozy treat for soulful evenings.

1
Peel the apples and cut them into small cubes. Mix with cinnamon.
- Apple: 3 pieces
- Ground cinnamon: to taste
2
In a separate bowl, mix dry skim milk, starch, and baking powder.
- Skim milk powder: 5 tablespoon
- Cornstarch: 1 tablespoon
- Baking powder: 1 teaspoon
3
Separate the whites from the yolks. Whip the whites into a stiff foam.
- Chicken egg: 3 pieces
4
Beat the yolks with cottage cheese and sweetener (I used Milford, 3 teaspoons, it was very sweet). Gradually add dry ingredients to the mixture and beat with a mixer on low speed.
- Soft low-fat cottage cheese: 125 g
- Sugar substitute: 3 teaspoons
5
Then add the whipped egg whites in small portions and gently mix with a spoon.

There are two options: you can add apples to the batter right away and mix. Or you can do it like I did: line the bottom of the steamer with parchment paper (or grease with a drop of olive oil, but I was fighting for the recipe's dietetic nature). Place the apples with cinnamon, pour the batter on top, and set for 30-35 minutes.
- Apple: 3 pieces
- Ground cinnamon: to taste
