Madeleine cookies with red currant

Madeleine cookies with red currants are an exquisite dessert of French cuisine inspired by classic madeleines that legend says originated in the 18th century in Lorraine. The airy batter, made from whipped eggs, butter, and flour, acquires a delicate texture and lightness. The addition of fresh or frozen red currants gives the pastry a slight tartness, creating a subtle balance between sweetness and refreshing berry notes. After a brief cooling period, the batter is baked in characteristic shell-shaped molds where it develops a golden crust. The finished madeleines are dusted with powdered sugar to enhance their refined sweetness. This dessert pairs perfectly with aromatic tea or coffee, bringing the atmosphere of a Parisian café into the home setting.
