This classic Russian dessert originated as a way to use up yesterday's bread, but over time the recipe evolved, gaining an airy texture thanks to egg-based dough. The sweetness of apples combines with the light tartness of plums, while cinnamon adds warmth to the flavor. Charlotte pairs perfectly with tea and can be both an everyday and festive treat. Serve it warm with a scoop of vanilla ice cream or a spoonful of sour cream — this will only enhance its rich taste!

Turn on the oven (temperature 200 degrees).

In a bowl, beat the eggs with sugar and add baking soda extinguished with vinegar.
- Chicken egg: 3 pieces
- Sugar: 1 glass
- Slaked soda: pinch
- Vinegar: 1 teaspoon

Gradually add sifted flour to the egg mixture (you may need a little more or less flour, the consistency should be not liquid, slightly flowing).
- Wheat flour: 1.5 glass

Add a teaspoon of cinnamon without a heaping to the mixture (I think this is the optimal amount, but you can add more or not add it at all).
- Cinnamon: 1 teaspoon

Wash the apples, remove the seeds, and cut them into the thinnest slices possible.
- Apple: 500 g

Wash the plums and cut them into 4 pieces.
- Plums: 100 g

Arrange the apple slices nicely in the baking dish, then place pieces of plum on top.

Then pour the batter over the fruits, it should fill all the gaps between the fruit slices.

Bake for 30–40 minutes until a crispy crust forms.
