Lemon wedges

4 servings

60 minutes

Lemon slices are a traditional treat of Russian cuisine, known for their vibrant flavor and simple elegance. This dessert combines the tartness of fresh lemons with the sweetness of sugar syrup, creating a harmonious balance that refreshes and delights. Historically, such candied fruits were popular as a way to preserve fruits and give them a new flavor twist. Lemon slices are perfect for serving with tea or coffee, complementing the aroma of hot beverages. They can be used as decoration for baked goods or added to desserts for a citrus note. Through multiple soakings in syrup and subsequent drying, the slices become translucent while retaining their firmness and rich taste. This treat is a small gastronomic joy that carries the warmth of home comfort.

Clean the citrus fruits, divide them into segments, and let them dry overnight or longer. If there are seeds, cut the segment from the top and remove them.

    Required ingredients:
    1. Lemon to taste

Pour 150 ml of water into a pot, add 250 grams of sugar, and boil for a couple of minutes. Place the dried slices in the syrup and cook on low heat for 5 minutes. It's best to add enough fruit so they don't interfere with each other.

Leave in syrup for a day and boil again for 5 minutes. Remove the slices from the hot syrup and place them on parchment to cool. They can be left for a couple of days simply on the kitchen counter, or dried in the oven at a low temperature with the door slightly open. The dried slices should be rolled in sugar.
