Devil's Food Cake with Chocolate Ganache

Mix all dry ingredients in a bowl, making sure to sift them. Whisk together. Separately mix water, coffee, oil, and vinegar. Add to the dry ingredients. Mix everything quickly. Add vanilla.
- Wheat flour: 200 g
- Sugar: 200 g
- Cocoa powder: 30 g
- Salt: 0.3 teaspoon
- Soda: 1 teaspoon
- Water: 240 ml
- Vegetable oil: 80 ml
- Vinegar: 1 tablespoon
- Vanilla: to taste
- Instant coffee: 1 teaspoon

Pour the batter into a 16–18 cm diameter mold. Grease the mold with butter or vegetable oil beforehand. Line the bottom with parchment paper. Tap the mold with the batter lightly on the table to spread it evenly. Bake at 175 degrees for about 40–45 minutes. Be sure to check; a toothpick should come out clean, but do not overbake.

For ganache, bring the cream to a boil, remove from heat, and add pieces of chocolate. Preferably good quality! Let it sit for 5 seconds, then stir.
- Cream 33%: 150 ml
- Dark chocolate: 100 g

Until the mixture becomes homogeneous and shiny. Place in the refrigerator until completely cool. Optionally, you can add rum or cognac to the ganache.

Cool the finished cake layer well. Whip the ganache with a mixer to make it fluffier. Cover the cake with it. Decorate to your taste.
