Christmas kalach is a traditional Ukrainian pastry symbolizing home comfort and celebration. Historically, kalach had ritual significance; its round shape symbolized the sun and prosperity. Preparation requires patience and care—the dough is kneaded thoroughly, rises in warmth, and is baked to a golden crust. Add yeast and half of the flour to warm milk.
- Milk: 1.5 glass
- Fresh yeast: 50 g
- Wheat flour: 1 kg

Beat the yolks with sugar until white, then add softened butter and mix well.
- Egg yolk: 10 pieces
- Sugar: 1.5 glass
- Butter: 400 g

Combine everything and add the leftover flour.
- Wheat flour: 1 kg

Knead the dough until it comes off your hands. Hit it 300 times.

Add raisins and nuts to the dough. Knead well again and place in a warm place.
- Seedless raisins: 250 g
- Nuts: 100 g

Let rise, knead.

Roll out a bit and twist into a rope.

Place in a mold or on a baking sheet in the shape of a loaf.

Let it stand for 5 minutes.

Brush with whipped egg white and sprinkle with nuts.
