Roll the dough in one direction (to avoid mixing the layers) into a rectangle. The thickness of the rolled dough depends on your preference. I don't make it too thin.

Cut the rectangle into elongated isosceles triangles.

Spread the triangles with Dijon mustard (very thin layer, just don't overdo it).

Place thinly sliced ham on each triangle (it's better if it's sliced right at the store — then it will be thin enough).

Place grated parmesan on a piece of ham.

Cut the base of the triangle and roll the croissant towards the acute angle of the triangle.

Place the shaped 'croissants' on a baking sheet lined with parchment paper.

Mix egg yolk and boiled water in equal proportions in a glass.
