It is advisable to take all ingredients (except for the cream) out of the refrigerator.

Whisk the yolks with sugar until a thick light (almost white) foam forms. Whip the cream (carefully! don't turn it into butter). Mix the yolks with cheese using a spoon, then gently fold in the whipped cream.
- Egg yolk: 3 pieces
- Sugar: 2.5 tablespoons
- Cream 30%: 150 ml
- Mascarpone cheese: 300 g

Mix coffee (not hot) with liqueur. Soak the sponge with the coffee and liqueur mixture.
- Freshly brewed coffee: 150 ml
- Amaretto liqueur: 4 tablespoons

Cover the cake layer with 1/3 of the cream. Repeat with the remaining layers. Decorate the cake with cocoa powder.
